A successful lawyer and a well-known gastronomy lover Alexander Rappoport opened the “Chinese Certificate” on Sretenka - the first restaurant of its own. Prior to this, as a co-owner, Alexander opened the Ginger (more than ten years ago) and Meat Club restaurants, and also recently remade the dull The Bridge into a very decent Brasserie Bridge. And this is not counting the advice on changing the menu in other Moscow restaurants. Rappoport approached the Chinese Letter very seriously and did not seem to miss any details. The interior at first glance seems too evening, from white tablecloths you expect a serious check for the result of dinner. Ten minutes - and you understand that this is not so: the tables are arranged tightly, rather like in a bistro; reproductions of bright, sometimes with provocative scenes of paintings by contemporary Chinese artists hang on the walls (the originals, they say, are very expensive). Not to mention the fact that food prices in the Chinese letter are not high. By the way, by the way about reproductions: there are originals, but not paintings. On shelves and shelves are real ancient vases and porcelain figures from the personal collection of Rappoport. Although these rarities are mixed with replicas. Still, this is a restaurant, not a museum. At the same time, the restaurant does not cook strictly according to recipes, on the contrary: these are mainly experiments, but they were performed exactly within the framework of the right technique, which the chef brought from China just possesses. Basic products use the right ones. The menu includes not only woks, dim sums and beaten cucumbers, of course obligatory, but also pork ears, beef tongues, chicken legs and calf stomachs. When not a Chinese, but a Russian, opens a restaurant of Chinese cuisine in Moscow, the decision to enter this into the menu is worthy of great respect.
